Coffee Flavor 101 | 1. What is coffee tasting?

1. Definition:

- Coffee tasting, also known as coffee cupping, is the process of tasting and evaluating the flavors of coffee.

- This process typically takes place under standardized conditions, including the use of the same coffee-to-water ratio, specific water temperature, and controlled extraction time. Each step in the process is crucial to ensure consistency and accuracy in the evaluation.

2. Purpose:

- The main purpose of coffee tasting is to assess the quality and characteristics of coffee beans. This process helps coffee professionals, such as roasters and buyers, to identify specific flavor profiles, detect defects, and ensure consistency in their products. It is also used to compare different coffees and make informed decisions about purchasing or blending.

3. Example:

- In practice, cupping is not only used to assess the quality of green coffee beans but also to test different roast batches or when a coffee company wants to develop a new product line. Samples may come from famous coffee-growing regions such as Ethiopia, Brazil or Vietnam and can be evaluated based on various factors like fruity or floral aromas, bright acidity, or a chocolatey finish.
